Recipe Name - Samosa 

 

The triangular shaped flaky pastry filled with spicy potato, chicken or lamb filling is a popular snack not only in India but in several countries of the world. Because samosa is so common in India. You literally get samosa and chai (Tea) at every other street corner. I always considered it to be a quintessential Indian delicacy. But its origin is of Middle East and it was introduced to India during the Delhi Sultanate rule. Later it was added in North Indian Cuisine (Snack).

Samosa can be vegetarian or Non-Vegetarian depending upon your will. This deep-fried snack is something that can satisfy your hunger pangs and make you happy instantly! Stuffed with spicy potatoes that are either sautéed or just potatoes mashed with spices, it takes only minutes to prepare this yummilicious snack at home. Serve this hot recipe with any chutney of your choice and make it all the more scrumptious in the coming occasion all the more happening, while earning appreciations for your amazing culinary skills. Samosa is one such snack, which nobody can resist and is loved by people of all age groups and so will be an instant hit in your household. 

Today we are going to prepare Vegetarian version of Samosa which is stuffed with Potatoes. So, without wasting much of time and making you hungrier, lets Jump into the Recipe.

 

Preparation Time :- Approx 30 min

Servings - Easily 20 to 25 samosa

Ingredients: -

For Cover:


  • 1 cup all-purpose flour (Maida)
  • Water to Knead dough
  • 2 tbsp oil
  • Little salt
  • 1/4th tsp. Carrom Seeds (Ajwain) (optional)

For Stuffing:


  • 3-4 Potatoes (boiled, peeled & mashed)
  • 2 Tbsp Oil 
  • 1 medium size Finely chopped Onions 
  • 1/2 cup Green Peas (boiled)/ Frozen can be taken
  • 1-2 Green Chilies (finely chopped)
  • 1/2 tsp Ginger (crushed)
  • 1 tbsp coriander finely chopped
  • 1/2 tsp Garam masala (Mixture of few Indian Spices)
  • Salt to taste
  • Red chili powder to taste
  • 1/2 tsp. Dry Mango powder (Amchur) (optional)

Method

Step 1

Mix the dough Dry ingredients. Add water little by little and make a hard dough. Keep it under a wet cloth for ten to fifteen minutes.

Step 2

Cook green peas in salted boiling water till soft. Refresh in cold water. Drain out excess water (if taken Frozen Peas then no need to boil). Heat oil in a pan, add cumin seeds and when they start to changing its colour, add finnely chhopped onions and let it saute for 2 min. Add ginger, green chillies and Smashed potatoes. Add red chilli powder, salt, Mango Powder and garam masala powder. Stir well.


Step 3

Sprinkle water and cover the lid. cook till potatoes are done. Add green peas and mix well. Remove it in a bowl and let it cool. Your Samosa Stuffing is ready.

Step 4

Now Divide the dough into 12 equal portions and roll them into balls Apply a little flour and roll them into six inch diameter elongated diskettes. Cut into half, apply water on the edges. Shape into a cone and stuff it with the potato and peas filling. Seal the edges well. For your Convenience I have posted few photos explaining how to fold the samosa. 


Step 5

Deep fry in medium hot oil till crisp and golden brown. Drain onto absorbent paper. Serve hot with tamarind chutney or Mint Chutney.
