If you are someone, who is fascinated with Lucknowi cuisine then you cannot just deny how delicious Boti Kababs are! It is a perfect appetizer recipe for parties and get-togethers.
Boti kabab is a variety of Indian kabab consisting of chunks of meat (lamb, mutton, chicken, or beef) that are soaked in a mixture of yogurt, garlic, ginger, chilis, Raw papaya, and spices such as garam masala, chili powder, and cumin. After the marinating process, the meat chunks are skewered and grilled to perfection, then brushed with ghee. These kebabs are typically enjoyed as a snack or an appetizer and are usually accompanied by raw onions, lemon wedges, various chutneys, or Indian bread on the side. So, if you are a non-vegetarian lover who likes to dig into the spicy and flavourful dishes, then this kabab recipe is something you must try at home!
Today I am Preparing this recipe with Mutton (Meat) Pieces
Ingredients: -
½ kilogram Boneless Mutton 1cubes
2 tablespoons raw papaya paste
1 tablespoon Ginger paste
1 tablespoon garlic paste
½ teaspoon green chilli paste
½ teaspoon red chilli powder
¼ teaspoon Garam masala powder
Salt to taste
¼ cup butter-melted
A few onion rings as required
Green chutney as required
Method: -
- Mix together the papaya, ginger, garlic and green chilli pastes with chilli powder, garam masala powder, and salt and apply this on the cubes of mutton. Set aside in the refrigerator for three to four hours to marinate.
- Pressure-cook the marinated mutton cubes with one cup of water till the pressure is released four times (4 whistles) or till half done.
- Remove the lid when the pressure reduces and check if there is any liquid remaining. If yes, then cook till all the water evaporates. Remove from the pressure cooker and set aside.
- Heat a grill and grill the mutton cubes till completely cooked. Baste with melted butter from time to time so that mutton does not dry out.
- Once done, transfer to a plate and serve with the onion lachcha and the Mint Chutney.
Tips By Nisrin
If you are making this with Chicken pieces than no need to pressure cook the chicken pieces. Also Raw Papaya can be skipped with Chicken Pieces, as chicken gets cooked faster than Meat.
Dont cook Boti Pieces much in the pressure cooker . Cook it till its 75% cooked, or else if you cook it 100% than while Grilling it on skewer , it will tear apart .
Dont add much water in the pressure cooker while cooking Boti pieces, as meat itself releases water too.
