What is Sheer Khurma?
Sheer Khurma is a Persian Term where Sheer means Milk and Khurma means Dates. Sheer Khurma is a Mughlai Dessert made with milk, Dates, fine vermicelli, nuts & Ghee (Clarified Butter). It is a festive Delight and is a must in Ramadan Eid called Eid-Ul-Fitr. Sheer khurma is very Popular in Afghanistan, Pakistan, India and parts of Central Asia. Depending on the region, cardamom, pistachios, almonds, cloves, saffron, raisins, and rose water are also added.
This special dish is served on the morning of Eid day in the family after the Eid prayer as breakfast, and throughout the day to all the visiting guests.
Its Really Easy and mouth watering Dessert . In this Recipe you can use Dry fruits according to your Choice, Taste and Availability. Its a no fail Recipe and anybody can try and enjoy its taste . So without much wasting time lets Dig into the Recipe.
Ingredients :-
2 tablespoons ghee
4 green cardamom pods, cracked open, then seeds removed and crushed with a mortar and pestle
3 tablespoons crushed dried vermicelli noodles
4 tablespoons coarsely chopped pistachios
4 tablespoons Almonds (Soaked & Peeled)
4 Tablespoon Cashew Nuts
3 tablespoon green or golden raisins
1 & 1/2 Litre milk
1/4 cup sugar, or to taste
½ Cup Condensed Milk (optional)
7 dried dates, soaked in warm water overnight, pitted, then each chopped into 4 pieces
1/2 teaspoon crushed saffron threads (Optional)
Method: -
1. Heat the ghee in saucepan over medium heat. Add the cardamom seeds and cook until fragrant, 10 to 15 seconds. Add the vermicelli and stir constantly until toasted, 5 to 7 minutes. Be careful that they don't turn too dark and burn.
2. Add the nuts and Dates Except Raisins (as they get burn very fast and at times it has sour taste so if we boil raisins with milk, it might get turn into curd which we don’t want) and cook for about 1 Minute or until the aroma starts (You can also add desicated coconut ). Add the milk, followed by the Condensed Milk and sugar. Reduce the heat to low and simmer, stirring occasionally, until the vermicelli is cooked and the milk begins to thicken slightly. The consistency needs to resemble a milky drink, so if it gets too thick, add a little more milk.
3. Add the saffron, stir to combine, and warm through and allow the saffron to colour the milk. Serve warm in small glasses.
Can you freeze Sheer Khorma?
This can be easily frozen in a freezer-safe box. When ready to eat, just thaw it on the counter for 2-3 hours and then micro it until it is warm.
You can heat it over stove top too on medium heat.
Pro Tips by Nisrin
Use fine vermicelli specially made for making sheer khurma. These are also called nylon vermicelli.
Use full-fat milk to make this dessert. It will thicken to creamy goodness increasing the taste of the dessert.
Using Condensed Milk is completely Optional , but if added it will give more creamy texture to the Dish.
Use of dates is a must while making this dessert. Use seedless dates and chop them into small pieces before adding them in the milk.
Crush the clove and Cardamom slightly before adding it in the ghee as it will release the flavours better.
You can also add or skip adding saffron. Adding saffron makes it richer and flavourful but skipping it gives a whole new flavour to the dish.
Add some more milk if the sheer khurma gets too thick.
You can also add some rose water or kewda essence to this dessert.
Is it eaten Hot or Cold?
This dish is generally served warm but I like to eat
mine chilled. There are no rules to enjoy a dish. Just see what suits your
fancy.
